Healthy Spicy Chicken

One of my favorite quick and easy recipes is for a chicken breast with a kick.  I simply preheat the oven, line a cookie sheet with tin foil, sprinkle some chipotle pepper spice on both sides of a chicken breast and cook until my meat thermometer reads 160 Fahrenheit and VOILA ... a quick, easy and healthy way to cook chicken.

I eat the chicken as-is or sometimes cut it up to make a sandwich in my panini press.  This is a great meal to have with fresh fruit or if you prefer roast some vegetables right alongside the chicken.  Delish.
