Martha Stewart has a fantastic article on her website entitled 100 Quick Chicken Recipes.
I found this feature when I was working on adding recipes to our custom cookbook that I posted about last week. I printed out all the recipes that I liked and handed them over to my husband who threw away the ones he didn't have a taste for. What we were left with was a pile of recipes that were quick and easy to try out.
Our favorite is the Lighter Chicken Enchiladas. They are not only better for you then the packaged version at the store, but they also taste better. It is a great recipe because there are not too many ingredients so we usually just have to buy the tortillas to make it happen for dinner. The portion is perfect for 3 people so one of us gets lucky and has leftovers for lunch the next day.
Another favorite is the Cayenne Rubbed Chicken with Avocado Salsa. This is another one that I love because we always have chicken in the freezer (we like the frozen organic chicken breasts you can get at Walmart), and we always have the spices and onions so it is usually just a matter of grabbing an avocado to make it happen.
