Avocados

Avocados are one of my favorite foods.  I love to slice them on salads, sandwiches, and mush them up for some homemade guacamole.

Not only are they delicious, but they are also full of health benefits.  From Avocado.org
"Avocados provide nearly 20 essential nutrients, including fiber, potassium, Vitamin E, B-vitamins and folic acid. They also act as a "nutrient booster" by enabling the body to absorb more fat-soluble nutrients, such as alpha and beta-carotene and lutein, in foods that are eaten with the fruit."
The Haas avocado is the species that is most available in grocery stores in the USA.  Haas Avocados and have about 250 calories per medium sized avocado,  Here is how I usually eat my avocado.

Quick & Easy Guacamole

1 Avocado Sliced
2 tbsp Chopped Fresh Onion
3 tbsp Fresh Squeezed Lime Juice

Combine ingredients in a blender or food processor and mix to desired consistency.  You can also chop everything up by hand, using a spoon for a smoother texture.  Serve on fresh tortilla or pita chips.

Healthy, delicious, and I love the shade of green inside the avocado.
